Curd:
At Vijay Dairy & Sweets, we manufacture curd from standardised milk and using the best bacterial culture. So that the product's shelflife increases and taste maintains its originality. Lassi:
Lassi is a traditional, South Indian beverage, originally from Punjab made by blending yogurt/curd with water, salt, and spices until frothy. Traditional lassi is sometimes flavored with ground roasted cumin. The Lassi of the Punjab uses a little milk and is topped with a thin layer of malai, a clotted cream. We have Rose Lassi, Mango Lassi and Dry Fruit Lassi as a variety in this class. Lassis are enjoyed chilled as a hot-weather refreshment. With a little turmeric powder mixed in, it is also used as a folk remedy for gastroenteritis.
Shrikhand:
Shrikhand is an Indian dessert made of strained yogurt/curd. It is one of the main desserts in Gujarati cuisine, and a common side dish in Maharatrian cuisine. The yogurt/curd is tied and hung until all the water has drained off, the result being a thick and creamy yogurt/curd. Dried and fresh fruit such as mango are also added. Other ingredients include sugar, cardamom powder, and saffron. The dish is served chilled. In Gujarati cuisine, the Shrikhand is not eaten as a dessert, but as a side-dish to breads such as poori.
Maththa:
One can designate maththa as shrikhand but the difference is in consistency. Maththa has slight loose consistency compared to shrikhand. Whereas shrikhand has Ice Cream type consistency. At Vijay Dairy & Sweets we add fresh cream and milk in maththa so that product's palatability improves.

Ghee:
At Vijay Dairy & Sweets, Ghee is made by simmering unsalted butter in a large pot until all water has boiled off and protein has settled to the bottom. The cooked and clarified butter is then spooned off to avoid disturbing the milk solids on the bottom of the pan. Unlike butter, ghee can be stored for extended periods without refrigeration, provided it is kept in an airtight container to prevent oxidation and remains moisture-free. |
